Ingredients:

Chargrilled Chicken Bowls

Salsa

  • ½ ripe pineapple, peeled & diced 2cm
  • 1 avocado, diced 1cm
  • 1 bunch coriander, roughly chopped + extra to garnish
  • Juice of 1 lime
  • 1 green chilli, thinly sliced into rounds

Method:

1. Preheat your oven or air-fryer for the chicken.

2. Cook the chargrilled chicken burgers according to packet instructions, until golden and cooked through.

3. Combine the sour cream, lime zest and juice, and chipotle together in a small bowl with a pinch of salt. Set aside to serve.

4. Meanwhile, make the salsa. Add the pineapple, avocado, coriander, lime juice and chilli to a medium bowl. Season with salt and toss together. Set aside to serve.

5. Cook the pre-cooked rice in the microwave according to packet instructions.

6. Serve the rice, chicken and salsa in a bowl topped with the lime sour cream. Garnish with the coriander and extra chipotle sauce.
