Butter Chicken Burritos

Ingredients:

Butter Chicken Breast Chunks 500g
  • 1 Butter Chicken Breast Chunks 500g
  • 4 large flour tortillas
  • 2 cups pre-cooked basmati rice (or 2 rice microwave pouches)
  • 1 cup cos lettuce leaves
  • 1/4 cup plain natural yoghurt


Method:

  1. In a large fry pan over medium heat, sear the chicken for 3-4 minutes until golden brown. Lower the heat and let the chicken simmer for 4-5 minutes or until cooked through.
  2. While the chicken is cooking, lightly warm your tortillas, then evenly divide the rice, chicken and lettuce between the 4 tortillas.
  3. Drizzle with the yoghurt, wrap up tightly and enjoy!

Serve with: A sprinkle of fresh coriander and chilli. 
Tip: For extra saucy butter chicken, stir 2 tablespoons of yoghurt or cream into the chicken at the end!
