1 tin cannellini beans or butter beans, drained & rinsed
1 tin corn kernels, drained & rinsed
1 tin kidney beans, drained & rinsed
1 tin crushed tomatoes
Small handful fresh coriander
Cook the portions as per packet instructions in the oven or air fryer.
While the chicken is cooking, heat a splash of oil in a large fry pan over medium high heat. Add the onion & capsicum, stirring regularly for about 5 minutes until beginning to char and soften. Reduce the heat to medium and add the garlic, paprika, cumin and oregano. Toast until fragrant.
Stir in the beans and corn, then add the chopped tomatoes and a cup of water. Bring to boil then reduce heat to low and simmer for 20 minutes, until slightly thickened.
Serve your chicken with the beans on the side and sprinkle over some fresh coriander.
