- 1 Satay Chicken Breast Chunks 500g
- 1 red capsicum, sliced
- ½ cup coconut cream
- 200g dry rice noodles
Method:
- Add a splash of oil to a large fry pan over medium-high heat. Add the chicken and capsicum and stir fry for a minute, or until golden brown. Stir in the coconut cream and simmer for 7 minutes.
- While the chicken is cooking, put the rice noodles in a large bowl and cover with boiling water. Let it sit for 7 minutes and then drain.
- Add the noodles to the chicken and stir to combine.
Serve with: Toasted peanuts and coriander with a squeeze of lime.
Tip: As per packet instructions, you can add 1-2 tbsp of peanut butter to the satay chicken and stir briefly to combine for an extra peanuty flavour!
