Add the orzo, smoked chicken, lemon zest, lemon slices, chicken stock and cream to a medium sized baking dish. Season generously with salt and pepper, then mix to combine. Place in the oven uncovered to bake for 30 – 35 minutes.
Remove from the oven, stir through the chopped spinach, peas and parmesan and place back in the oven for 5 minutes, until warmed through.
Let sit for 5 minutes before serving to allow the sauce to thicken. Serve with an extra sprinkle of parmesan & grating of lemon zest.
