Fresh Caprese Topped Crunchy Chicken

Ingredients:

  • Tegel Free Range Crunchy Burgers 650g
  • 200g fresh mozzarella, drained & thinly sliced into rounds
  • 300g ripe cherry tomatoes, cut in half
  • 1 handful fresh basil leaves + extra to garnish
  • 2 cloves garlic, minced
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp freshly-squeezed lemon juice
  • ½ tsp chilli flakes
  • 6 Tbsp basil pesto

 

Method:

1. Preheat your oven or air-fryer for the chicken.

2. Place the chicken burgers on a lined oven tray. Season lightly with salt and cook according to packet instructions, until golden and cooked through.

3. Remove from the oven and top the chicken with the slices of mozzarella cheese. Switch oven to high grill. Grill the chicken on the upper oven rack for 2-3 minutes, until the cheese is melted and bubbling.

4. Meanwhile, toss the tomatoes, basil leaves, garlic, olive oil, lemon juice and chilli flakes together in a medium bowl with a pinch of salt.

5. Top the chicken with the basil pesto and tomato salsa.

6. Garnish with some extra basil leaves.
