Add a splash of oil to a wok or large frypan over high heat. Add the capsicum, chicken and prawns and stir fry until beginning to colour. Add the snow peas, garlic, ginger and half the spring onions and continue to stir fry until fragrant.
Add the rice and continue to stir fry for 2 minutes, until the rice is warmed through. Stir through the soy sauce & vinegar.
Garnish with the remaining spring onion and a drizzle of sriracha!
